As a kid growing up in Central Texas, Barbecue was something that was always around, for every occasion. Not hot dogs and hamburgers, but Brisket and homemade Sausage is what our barbecues consisted of. Whether we smoked it ourselves or got it from the Meat Market that had been around for 100 years, there was always Brisket and smoked provisions in our lives. Traditional Barbecue is something to be cherished and respected. From cutting the Oak tree down , splitting and stacking the logs to season 3-6 months, to staying up all night tending a fire and adding wood for 16+ hours. This is just a small taste of what goes into that Brisket or Pork sandwich. So when we see more and more barbecue places trying to skip these crucial steps and let a dial and propane or electricity cook their meat and pass it off as barbecue, well that just ain't right!
County Road Provisions is a food truck that sells smoked provisions 1 day a week and offers catering for anywhere between 20-500 people
Starting with just our barbecue pit on the side of the road out in the country, we have continued to build a faithful following of folks. We have grown our business to a food trailer and look forward to the future of County Road Provisions and the people we meet along the way.
